Proofing and Resting Time: 6 hours

Baking Time: 10 minutes

Outcome: 27 pieces

 

Tools needed: Mixer including bowl, Kitchen scale, Baking sheet, Baking tray.

Ingredients and Method

Ingredients

  • 125 g Rex Milano
  • 375 g Wheat flour (Type 550)
  • 250 g Sugar
  • 275 g Butter
  • 75 g Whole egg
  • 10 g Baking powder

Method

  1. Mix all Ingredients together in mixing bowl for 3-4 minutes slow.
  2. Place into a fridge and leave overnight or for at least 6-8 hours.
  3. Scale the dough into 40 g pieces. Mould into balls and gently press the tops of the dough flat.
  4. The oven should have a temperature of 180° C – 190° C when you put the cookies in.
  5. Bake the cookies for 10 - 15 minutes.
