Bread-making has never been so easy with the Ireks Chia Bread Mix! ????
Crusty on the outside and pillowy soft on the inside, make healthy homemade rolls your go-to addition for any breakfast spread and dinner party. Our recipe is packed with chia seeds, a superfood loaded with nutrients, antioxidants and high fiber and protein content for a good energy boost.


Preparation Time
: 8 – 12 minutes

Proofing and Resting Time: 50 - 60 minutes

Baking Time: 18 – 22 minutes

Outcome: 11 Rolls

Tools needed: Mixer including bowl, Kitchen scale, baking tray and 3 ice cubes

Ingredients and Method

Ingredients

  • 250 g Chia bread mix
  • 250 g Wheat flour (Type 550)
  • 11 g Instant yeast
  • 300 ml Water, approx.

Method

  1. Mix all Ingredients for 2 minutes slow and 6 minutes fast. We recommend using cold water to keep the dough temperature at max. 26°C
  2. Cover the bowl and start the bulk fermentation for 15 minutes
  3. After bulk fermentation, scale the dough into 70 - 75 g pieces
  4. Mould the dough in your preferred shape, we recommend long and oval and place onto a greased baking tray
  5. Spray the dough tops of the dough pieces with water and dip into Chia Bread Mix or Oats
  6. Allow the dough to final proof for 35 - 45 minutes, we recommend covering the baking tray with plastic foil or cling film to keep the moisture in the dough. If you press your finger in the dough and it comes back halfway it’s ready to bake
  7. Score the tops of the dough pieces to stop the crust cracking. We recommend one long score along the middle
  8. The oven should have a temperature of 190°C when you put the rolls in. We recommend putting 2 - 3 ice cubes on the bottom of the oven to get a steaming effect for a nice crust
  9. After approximately 5 minutes of baking decrease the temperature to 160°C and bake the rolls for 18 - 22 minutes
