Tools needed: Mixer including bowl, kitchen scale and baking tray

Ingredients and Method

Ingredients

  • 350 g Golden Muffin Mix
  • 150 g Wheat flour (Type 1050)
  • 180 g Unsalted butter
  • 25 g Brown sugar
  • 50 g Whole eggs
  • 3 g Baking powder
  • 3 g Baking soda
  • 250 g Dark chocolate chips or coins
  • 3 g Salt
  • 40 ml Water

Method

  1. Mix all Ingredients together in mixing bowl, except chocolate chips or coins, for 2 minutes slow and 3 minutes fast.
  2. Add dark chocolate chips or coins and mix for around 1 minute on a medium speed.
  3. Scale the dough into 70 g pieces. Mould into ball and gently press the tops of the dough flat.
  4. Bake at 170°C for approx. 12-15 minutes.
