Golden Muffin Mix - Cookies Mr.Passart Wongprom (Chef Mhee)

Outcome: 15 cookies
Tools needed: Mixer including bowl, kitchen scale and baking tray
Ingredients and Method
Ingredients 350 g Golden Muffin Mix 150 g Wheat flour (Type 1050) 180 g Unsalted butter 25 g Brown sugar 50 g Whole eggs 3 g Baking powder 3 g Baking soda 250 g Dark chocolate chips or coins 3 g Salt 40 ml Water Method Mix all Ingredients together in mixing bowl, except chocolate chips or coins, for 2 minutes slow and 3 minutes fast. Add dark chocolate chips or coins and mix for around 1 minute on a medium speed. Scale the dough into 70 g pieces. Mould into ball and gently press the tops of the dough flat. Bake at 170°C for approx. 12-15 minutes.
